  • 1/4 c. oil
  • 1 medium onion, chopped

  • salt
  • garlic
  • bay leaves

Instructions

  1. Wash, split, and remove stems from the jalapeno peppers; set aside.
  2. In a medium saucepan, combine vinegar, water, and oil; bring to a boil.
  3. Drop in peppers, chopped onion, and sliced carrot; cook just long enough for peppers to change color.
  4. Place peppers and vegetables into pint jars to which 1/2 teaspoon of salt, 1 garlic clove, and 1 bay leaf have been added to each.
  5. Distribute the hot liquid into the jars.
  6. Seal the jars.
