Ingredients

  • 8 oz. all-purpose flour
  • 3 eggs
  • 5 oz. sugar
  • grated rind of 1 lemon
  • 5 oz. butter
  • pinch of salt
  • 2 tsp. baking powder

Instructions

  1. Grease and line the base and sides of a 6-inch deep round cake pan with wax paper. Sift flour, salt, and baking powder together.
  2. Cream the butter with sugar and lemon rind until light and fluffy.
  3. Gradually beat in the lightly beaten eggs, a little at a time, beating well in between.
  4. Carefully fold in the dry ingredients.
  5. Pour the batter into the prepared cake pan and smooth over the top.
  6. Bake in a 350°F (180°C) oven for 1 1/4 to 1 1/2 hours.
  7. Cool in the pan for 5 minutes, then turn out and allow to cool on a wire rack.
