Ingredients

  • 2 to 3 lb. stew beef
  • 3 large potatoes
  • 1 large onion
  • 1/2 tsp. pepper
  • 1/4 cup tapioca
  • 1 cup water
  • 6 carrots
  • 5 stalks celery
  • 2 tsp. salt
  • 2 Tbsp. sugar
  • 2 cups tomato juice

Instructions

  1. Clean and cut up the vegetables.
  2. In a large Dutch oven, layer the stew beef, potatoes, onion, carrots, and celery.
  3. Combine salt, pepper, sugar, and tapioca; sprinkle over the vegetables and beef.
  4. Combine tomato juice and water; pour over all ingredients.
  5. Cover and bake at 275°F (135°C) for 4 hours.
