Ingredients

  • 1 1/2 lb. ground beef
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped onion
  • 1 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 1 cup white bread crumbs
  • 1/2 cup milk
  • 2 eggs
  • 1/4 cup fat
  • 2 cups whole wheat bread crumbs
  • 1/2 cup chopped celery
  • 1/4 teaspoon black pepper
  • 3/4 cup meat stock or water
  • 1/2 cup chopped pecans

Instructions

  1. Combine ground beef, chopped green pepper, chopped onion, salt, Worcestershire sauce, white bread crumbs, milk, and eggs. Mix thoroughly.
  2. Place half of this mixture in the bottom of a greased loaf pan.
  3. Combine one egg, fat, whole wheat bread crumbs, chopped celery, black pepper, and meat stock or water. Mix well.
  4. Add chopped pecans to this mixture and mix thoroughly.
  5. Spread the pecan stuffing on top of the meat mixture in the loaf pan.
  6. Arrange the remaining meat mixture on top of the pecan stuffing.
  7. Bake at 350°F (175°C) for 1 1/2 hours.
  8. Cool slightly before removing from the pan and serving.
