Meat Loaf With Pecan Stuffing

Ingredients
- 1 1/2 lb. ground beef ⓘ
- 1/2 cup chopped green pepper ⓘ
- 1/2 cup chopped onion
- 1 teaspoon salt ⓘ
- 1 tablespoon Worcestershire sauce ⓘ
- 1 cup white bread crumbs ⓘ
- 1/2 cup milk ⓘ
- 2 eggs ⓘ
- 1/4 cup fat ⓘ
- 2 cups whole wheat bread crumbs ⓘ
- 1/2 cup chopped celery ⓘ
- 1/4 teaspoon black pepper ⓘ
- 3/4 cup meat stock or water ⓘ
- 1/2 cup chopped pecans ⓘ
Instructions
- Combine ground beef, chopped green pepper, chopped onion, salt, Worcestershire sauce, white bread crumbs, milk, and eggs. Mix thoroughly.
- Place half of this mixture in the bottom of a greased loaf pan.
- Combine one egg, fat, whole wheat bread crumbs, chopped celery, black pepper, and meat stock or water. Mix well.
- Add chopped pecans to this mixture and mix thoroughly.
- Spread the pecan stuffing on top of the meat mixture in the loaf pan.
- Arrange the remaining meat mixture on top of the pecan stuffing.
- Bake at 350°F (175°C) for 1 1/2 hours.
- Cool slightly before removing from the pan and serving.
