  • 1 (16 oz.) can mashed cooked pumpkin
  • 4 egg whites
  • 1/4 tsp. cream of tartar
  • 1/4 cup plus 3 Tbsp. sugar

Instructions

  1. Coat the bottom of a 10-inch spring-form pan with vegetable cooking spray. Wrap outside, bottom, and sides of the pan with aluminum foil.
  2. In a food processor, add Ricotta cheese and cream cheese and process until smooth.
  3. Add the brown sugar, flour, cinnamon, ginger, nutmeg, and cloves, then process until smooth.
  4. Pour the mixture into a large bowl and stir in the mashed cooked pumpkin. Set aside.
  5. In a separate bowl, beat the egg whites and cream of tartar at high speed until foamy.
  6. Gradually add 1/4 cup of sugar, one tablespoon at a time, and beat until soft peaks form.
  7. Gently fold in one-quarter of the egg white mixture into the pumpkin mixture.
  8. Continue folding in the remaining egg white mixture until well combined.
  9. Pour the batter into the prepared spring-form pan.
  10. Place the pan in a large shallow pan and add hot water to the larger pan to a depth of about 1 inch.
  11. Bake at 300°F (150°C) for approximately 45 to 50 minutes until set.
  12. Remove from the oven and take off the foil from the outside of the spring-form pan.
  13. Cover and chill the cheesecake for 8 hours before serving.
  14. Serve with fresh whipped cream or Cool Whip on top of each slice.
