Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 small onion, quartered
  • 1 bunch green onions
  • 1 cup chopped pecans or almond slivers
  • 1 orange, quartered
  • salt and pepper to taste
  • 2 small cans mandarin oranges, drained
  • 1/2 to 3/4 cup margarine

Instructions

  1. Boil chicken breasts with quartered orange and quartered onion in salted and peppered water until cooked through.
  2. Drain the chicken and allow it to cool, then chop into bite-sized pieces.
  3. Meanwhile, chop green onions and drain the mandarin oranges.
  4. In a bowl, combine chopped oranges, nuts, and mayonnaise, starting with 1/2 cup and adding more as needed.
  5. Add the chopped chicken to the mayonnaise mixture and stir to combine.
  6. Chill the salad for several hours or overnight.
  7. Serve chilled with crackers.
