Creamy and savory squash casserole combines fresh or frozen squash with a comforting blend of soup, sour cream, and seasonings, perfect for family dinners or holiday gatherings.

Ingredients

  • 1 1/2 lb fresh squash or 2 (10 oz) packages frozen squash
  • 1 can cream of chicken soup
  • 3/4 cup sour cream
  • 1 grated carrot
  • 1 medium diced onion
  • 1/2 package seasoned bread crumbs
  • 1/2 stick butter or margarine
  • salt and pepper to taste

Instructions

  1. Cook squash, drain and mash.
  2. Mix mashed squash with cream of chicken soup, sour cream, grated carrot, and diced onion.
  3. Add salt and pepper to taste.
  4. Dot the mixture with butter and sprinkle with seasoned bread crumbs.
  5. Bake uncovered at 350°F (175°C) for 30 to 40 minutes until bubbly and golden.
