Ingredients

  • 12 oz Jimmy Dean sausage (mild)
  • 1 1/2 cups diced cooked potatoes
  • 1 tablespoon chopped onion
  • 4 eggs
  • 2 tablespoons milk
  • dash of pepper

Instructions

  1. Crumble the sausage in a skillet and cook until browned.
  2. Add diced cooked potatoes, chopped onion, and pepper. Cook slowly for 15 to 20 minutes or until sausage and potatoes are done.
  3. In a bowl, beat the eggs and add milk.
  4. Pour the egg mixture into the skillet with sausage and potatoes.
  5. Cook until the eggs are thickened, stirring as needed.
