Ingredients

  • 1 to 1 1/2 lb. beef cubes
  • 1 (1 lb.) bag mixed vegetables
  • 2 stalks celery, chopped
  • 1 large onion, chopped
  • 2 cans tomatoes, cut up
  • 5 to 6 potatoes, peeled and diced
  • 1 cup okra, cut up
  • 1 tablespoon parsley
  • salt and pepper to taste
  • 1/2 head cabbage, chopped
  • 1 large can tomato juice

Instructions

  1. Put all ingredients in a large soup pot, except tomato juice.
  2. Cover with water and cook until vegetables are tender.
  3. Add tomato juice and cook about 10 minutes longer.
