Ingredients

  • 1/2 head romaine lettuce
  • 1/2 head iceberg lettuce
  • 3 to 4 stalks celery
  • 3 to 4 green onions
  • 1 (11 oz.) can mandarin oranges
  • 1/2 cup caramelized almonds
  • 1/2 cup oil
  • 2 to 3 tablespoons cider vinegar

Instructions

  1. Toss slivered almonds with about 1 tablespoon sugar in a frying pan over low heat.
  2. Stir until the almonds are caramelized and set aside to cool.
  3. Break the romaine and iceberg lettuce into bite-sized pieces and place in a salad bowl.
  4. Add chopped celery, chopped green onions, and drained mandarin oranges to the greens.
  5. In a small bowl, combine oil, cider vinegar, and 1 tablespoon sugar.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Sprinkle the caramelized almonds on top before serving.
