Ingredients

  • 1 1/4 cups quick oats
  • 1 1/4 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 3/4 sticks margarine
  • 1 cup raspberry jam or preserves
  • 3/4 cup white chocolate chips
  • 1/4 cup toasted chopped almonds

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine oats, flour, brown sugar, baking powder, and salt in a large bowl.
  3. Stir in melted margarine until mixture is crumbly.
  4. Reserve 1 cup of the crumb mixture; set aside.
  5. Press the remaining crumb mixture onto the bottom of an 8-inch square pan.
  6. Bake for 10 minutes.
  7. Spread raspberry jam evenly over the baked crust, leaving about 1/4 inch of space from the edges.
  8. Sprinkle with 1/2 cup white chocolate chips over the jam.
  9. Mix the reserved crumb mixture with the remaining 1/4 cup white chocolate chips and chopped almonds.
  10. Spread the raspberry jam layer, pressing lightly into the fruit.
  11. Bake for 30 to 35 minutes or until golden brown.
  12. Cool completely on a wire rack.
  13. Cut into squares and serve.
