A vibrant, crunchy salad featuring crispy baked ramen noodles, fresh vegetables, and tangy mandarin oranges, perfect for light lunches or summer gatherings.

Ingredients

  • 1 pkg. oriental flavored Ramen noodles
  • 1/2 cup sliced almonds
  • 2 Tbsp. sugar
  • 1/2 cup olive oil
  • 3 Tbsp. white vinegar
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/8 tsp. hot sauce
  • 1 head romaine lettuce, chopped
  • 3 celery stalks, chopped
  • 11 oz. can mandarin oranges, drained

Instructions

  1. Remove the packet of seasoning from the ramen noodles and mix it with sugar, olive oil, salt, pepper, and hot sauce. Set aside.
  2. Crumble the ramen noodles and bake with sliced almonds at 350°F (175°C) for 10 minutes, stirring occasionally.
  3. Remove from oven and allow to cool.
  4. In a large bowl, toss together chopped romaine lettuce and chopped celery.
  5. Add the baked noodles, toasted almonds, mandarin oranges, and the liquid mixture to the salad.
  6. Toss gently to combine and serve immediately.
