Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup white sugar
  • 2 eggs
  • 2/3 cup butter
  • 1 teaspoon vanilla extract
  • 1 cup ripe mango puree

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9 x 5 inch baking pan.
  3. Cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract and mango puree.
  6. In a separate bowl, whisk together all-purpose flour and baking soda.
  7. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  8. Pour batter into the prepared baking pan.
  9. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool before serving.
