Ingredients

  • 1 egg
  • 1/4 cup evaporated milk
  • 1/3 cup sugar
  • 1 cup prepared biscuit mix
  • 2 cans mango cheeks or fresh mango
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons flour
  • 3 tablespoons butter
  • 1/3 cup currant jelly
  • cream (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Grease an 8 x 12 x 2-inch baking pan.
  3. Beat the egg slightly and mix with evaporated milk.
  4. Stir in 3 tablespoons of sugar and the biscuit mix until smooth.
  5. Spread the batter evenly over the bottom of the prepared baking pan.
  6. Arrange a layer of drained mango slices over the batter.
  7. In a small bowl, combine remaining sugar, cinnamon, nutmeg, flour, and melted butter to make the topping mixture.
  8. Spoon the mixture over the mango slices.
  9. Bake for 20 to 25 minutes, until nicely browned.
