Ingredients

  • 2 (10 oz.) pkg. chopped spinach
  • 1 small onion
  • 3 cloves garlic
  • 1 Tbsp. Italian seasoning
  • 1 tsp. oregano
  • 2 oz. Velveeta cheese
  • 2 eggs
  • 1 can chopped mushrooms
  • 12 oz. Ricotta cheese
  • 4 oz. Mozzarella cheese

Instructions

  1. Saute onion and garlic in olive oil Pam.
  2. Add chopped spinach, Velveeta cheese, beaten eggs, chopped mushrooms, Italian seasoning, and oregano; cook for 10 minutes.
  3. Cook manicotti noodles according to package directions.
  4. Stuff cooked manicotti with the spinach mixture and arrange in a single layer in a baking dish.
  5. Cover the layered noodles with sauce and bake, covered, in a 350°F oven for about 30 minutes.
  6. Sprinkle mozzarella cheese over the stuffed noodles and bake an additional 3 to 5 minutes until cheese is melted.
