Ingredients

  • 2 pkg. jumbo shells
  • 1 lb. Ricotta cheese
  • 1/2 cup grated cheese
  • 2 eggs
  • 12 oz. Mozzarella cheese
  • 1 Tbsp. parsley
  • salt and pepper to taste
  • spaghetti sauce

Instructions

  1. Boil jumbo shells for 6 minutes and test for doneness.
  2. Do not overcook; drain and set aside.
  3. Mix ricotta cheese, grated mozzarella cheese, eggs, parsley, salt, and pepper to make the filling.
  4. Spread spaghetti sauce on the bottom of a 9 x 13-inch glass baking dish.
  5. Fill each shell halfway to three-quarters full with the cheese mixture and place in the prepared pan.
  6. Top the filled shells with additional spaghetti sauce and grated cheese.
  7. Cover the pan with foil and bake at 375°F for 40 minutes.
  8. Uncover and bake for an additional 10 minutes until bubbly and golden.
