Raspberry Peach Tiramisu

Ingredients
- 3 cups raspberries ⓘ
- 1/2 cup sugar
- 1 1/2 cups whipping cream ⓘ
- 15 oz part-skim ricotta cheese ⓘ
- 3 oz cream cheese ⓘ
- 1/2 cup confectioners sugar ⓘ
- 1 vanilla bean split or 1/2 teaspoon vanilla ⓘ
- 1 tablespoon lemon juice ⓘ
- 2 tablespoons raspberry flavor liqueur ⓘ
- 2 3-ounce packages ladyfingers ⓘ
- 4 tablespoons granulated sugar ⓘ
- 7 ripe peaches sliced ⓘ
Instructions
- In a food processor with a knife blade attached, blend 2 cups raspberries and 3 tablespoons granulated sugar until pureed.
- Pour the puree into a medium mesh sieve set over a bowl.
- Press the puree through the sieve with a spoon, discarding the seeds.
- In a clean food processor, process 1 1/4 cups whipping cream until soft peaks form.
- Transfer the whipped cream to a large bowl.
- In the same processor, combine ricotta cheese, cream cheese, and confectioners sugar; add vanilla into the processor.
- Blend the cheese mixture until smooth, then add the remaining 1/4 cup whipping cream and blend until combined.
- Fold the cheese mixture into the whipped cream in the bowl.
- In a medium bowl, stir sliced peaches, lemon juice, and 1/4 cup granulated sugar until combined.
- In a small cup, stir raspberry liqueur, remaining 1 tablespoon granulated sugar, and 1 tablespoon water until mixed.
- Separate ladyfingers and brush lightly on flat sides with the liqueur mixture.
- In the bottom of a 4-quart trifle or straight-sided glass bowl, arrange one-third of the ladyfingers.
- Spoon half of the raspberry sauce over the ladyfingers.
- Top with one-third of the cheese mixture, spreading to cover.
- Spoon half of the peach mixture over the cheese layer.
- Repeat the layering process once more.
- Top with the remaining ladyfingers, then spread with the remaining cheese mixture.
- Cover and refrigerate overnight. Before serving, sprinkle with the remaining raspberries.
