Raspberry Peach Tiramisu

Ingredients

  • 3 cups raspberries
  • 1/2 cup sugar
  • 1 1/2 cups whipping cream
  • 15 oz part-skim ricotta cheese
  • 3 oz cream cheese
  • 1/2 cup confectioners sugar
  • 1 vanilla bean split or 1/2 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 2 tablespoons raspberry flavor liqueur
  • 2 3-ounce packages ladyfingers
  • 4 tablespoons granulated sugar
  • 7 ripe peaches sliced

Instructions

  1. In a food processor with a knife blade attached, blend 2 cups raspberries and 3 tablespoons granulated sugar until pureed.
  2. Pour the puree into a medium mesh sieve set over a bowl.
  3. Press the puree through the sieve with a spoon, discarding the seeds.
  4. In a clean food processor, process 1 1/4 cups whipping cream until soft peaks form.
  5. Transfer the whipped cream to a large bowl.
  6. In the same processor, combine ricotta cheese, cream cheese, and confectioners sugar; add vanilla into the processor.
  7. Blend the cheese mixture until smooth, then add the remaining 1/4 cup whipping cream and blend until combined.
  8. Fold the cheese mixture into the whipped cream in the bowl.
  9. In a medium bowl, stir sliced peaches, lemon juice, and 1/4 cup granulated sugar until combined.
  10. In a small cup, stir raspberry liqueur, remaining 1 tablespoon granulated sugar, and 1 tablespoon water until mixed.
  11. Separate ladyfingers and brush lightly on flat sides with the liqueur mixture.
  12. In the bottom of a 4-quart trifle or straight-sided glass bowl, arrange one-third of the ladyfingers.
  13. Spoon half of the raspberry sauce over the ladyfingers.
  14. Top with one-third of the cheese mixture, spreading to cover.
  15. Spoon half of the peach mixture over the cheese layer.
  16. Repeat the layering process once more.
  17. Top with the remaining ladyfingers, then spread with the remaining cheese mixture.
  18. Cover and refrigerate overnight. Before serving, sprinkle with the remaining raspberries.
