Ingredients

  • 1/2 cup maple syrup
  • 1/3 cup apple cider vinegar
  • 1/4 cup water
  • 3 tablespoons Dijon mustard
  • 1/2 teaspoon salt
  • 1 tablespoon vegetable oil
  • 2 pounds skinless boneless chicken breasts

Instructions

  1. In a small saucepan, combine the maple syrup, apple cider vinegar, water, Dijon mustard, and salt.
  2. Bring the mixture to a boil, then immediately reduce to a simmer and cook for 15 minutes.
  3. Remove from heat and whisk in the vegetable oil. Let cool to room temperature.
  4. Cut the chicken into pieces weighing about 4 ounces each.
  5. Place the chicken in a shallow dish or sealable plastic bag and coat with enough sauce to cover.
  6. Marinate the chicken in the refrigerator for 30 minutes to 2 hours, turning several times.
  7. Preheat and prepare the grill.
  8. Grill the chicken for 4 minutes, then brush with the marinade.
  9. Turn the chicken and continue to cook until done, about 5 to 8 minutes longer.
