Ingredients

  • 2 1/3 cups sugar
  • 1/2 cup maple syrup
  • 2/3 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 egg whites
  • 1 cup broken pecans or walnuts

Instructions

  1. Combine sugar, maple syrup, light corn syrup, water, and salt in a 2-quart heavy saucepan.
  2. Cook, stirring, until the sugar is dissolved and crystals are wiped off the sides of the pan.
  3. Continue cooking without stirring until the mixture reaches the hard ball stage (265°F).
  4. Spread the mixture on a greased cookie sheet and let it cool before breaking into pieces.
  5. Stir in vanilla and broken pecans or walnuts before pouring into the pan, if desired.
