Ingredients

  • 3/4 cup chopped onion
  • 10 ears fresh corn, cut from cob
  • 1/3 cup minced bell pepper
  • 3/4 cup bacon grease
  • 4 tomatoes, peeled and chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Saute onions in bacon grease until transparent, about 5 minutes.
  2. Add corn and cook for 10 minutes, stirring constantly.
  3. Add tomatoes and green pepper; cook for 5 minutes or until very soft.
  4. Serve as is or stuff into cooked bell peppers or tomatoes and brown in the oven.
