Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 3 eggs
  • 1 1/4 cups oil
  • 2 (10 oz.) packages frozen strawberries

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine flour, sugar, cinnamon, nutmeg, salt, and baking soda in a large bowl.
  3. Make a well in the center of dry ingredients and add beaten eggs and oil.
  4. Using a slotted spoon, dip strawberries from their juice and add to the batter, mixing just until combined.
  5. Add enough strawberry juice to achieve a nice batter consistency.
  6. Divide batter into two greased loaf pans.
  7. Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before removing from pans and serving.
