- Preheat oven to 350°F (175°C).
- Combine flour, sugar, cinnamon, nutmeg, salt, and baking soda in a large bowl.
- Make a well in the center of dry ingredients and add beaten eggs and oil.
- Using a slotted spoon, dip strawberries from their juice and add to the batter, mixing just until combined.
- Add enough strawberry juice to achieve a nice batter consistency.
- Divide batter into two greased loaf pans.
- Bake for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before removing from pans and serving.
