Ingredients

  • 6 large tomatoes, cut into wedges
  • 1/2 cup coarsely chopped onion
  • 1/3 cup olive or canola oil
  • 1/4 cup red wine vinegar or cider vinegar
  • 1/4 cup minced fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon dried cilantro
  • 1/4 teaspoon coarsely ground pepper

Instructions

  1. Place tomatoes and onion in a shallow serving dish.
  2. In a separate bowl, combine olive or canola oil, red wine or cider vinegar, minced parsley, minced garlic, salt, dried cilantro, and ground pepper.
  3. Pour the marinade over the tomatoes and onion.
  4. Cover and refrigerate for at least 2 hours or overnight before serving.
