Ingredients

  • 1 1/2 lb. skinless, boneless chicken breasts
  • 8 oz. Monterey Jack cheese, grated
  • 8 oz. chicken broth
  • 1 egg
  • 1/2 c. bread crumbs
  • 1 small can sliced mushrooms

Instructions

  1. Dice the chicken breasts.
  2. Dip the diced chicken in beaten egg, then coat with bread crumbs.
  3. Brown the coated chicken in margarine in a large skillet for approximately 20 minutes.
  4. Place the browned chicken in a 9 x 9-inch casserole dish.
  5. Pour chicken broth over the chicken, then top with grated Monterey Jack cheese and sliced mushrooms.
  6. Cover the casserole dish and bake at 350°F for 1 hour.
  7. Serve hot with rice or noodles.
