- Cream together the sugar and shortening, then add the grated lemon rind.
- Add eggs one at a time, beating until fluffy after each addition.
- Sift together the flour, baking powder, and salt, then add to the mixture, beating after each addition.
- Pour half of the batter into a greased 8 x 8 x 2-inch pan.
- Pare and slice the tart apples, then place over the batter.
- Top with the remaining batter evenly over the apples.
- Sprinkle the mixture with 1/2 cup sugar, 1/2 teaspoon cinnamon, and 1/4 cup chopped nuts.
- Bake at 350°F (175°C) for 50 minutes, then serve.
