Ingredients

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1/2 cup grated lemon rind
  • 1 cup flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 1/4 teaspoon salt
  • 3 tart apples

Instructions

  1. Cream together the sugar and shortening, then add the grated lemon rind.
  2. Add eggs one at a time, beating until fluffy after each addition.
  3. Sift together the flour, baking powder, and salt, then add to the mixture, beating after each addition.
  4. Pour half of the batter into a greased 8 x 8 x 2-inch pan.
  5. Pare and slice the tart apples, then place over the batter.
  6. Top with the remaining batter evenly over the apples.
  7. Sprinkle the mixture with 1/2 cup sugar, 1/2 teaspoon cinnamon, and 1/4 cup chopped nuts.
  8. Bake at 350°F (175°C) for 50 minutes, then serve.
