- Scrub the potatoes and slice them, leaving the skins on.
- Cook the potatoes with sliced onion, salt, pepper, and a portion of butter.
- Place the potato mixture and cooked peas on a large double layer of aluminum foil.
- Fold over and seal tightly to form a packet.
- Place the foil packet on a grill and cook for 8 to 10 minutes, then turn over and cook for another 8 to 10 minutes.
- Remove from the grill, open the foil, and mash the potatoes and peas together.
- Add chicken broth, remaining butter, and seasonings to taste, and mix well.
