Creamy mashed potatoes and peas blended with onions and butter create a comforting side dish perfect for family dinners or casual gatherings.

Ingredients

  • 5 potatoes
  • 1 small package frozen peas
  • 1 onion
  • 1/2 cup chicken broth
  • 1/4 cup butter
  • salt

Instructions

  1. Scrub the potatoes and slice them, leaving the skins on.
  2. Cook the potatoes with sliced onion, salt, pepper, and a portion of butter.
  3. Place the potato mixture and cooked peas on a large double layer of aluminum foil.
  4. Fold over and seal tightly to form a packet.
  5. Place the foil packet on a grill and cook for 8 to 10 minutes, then turn over and cook for another 8 to 10 minutes.
  6. Remove from the grill, open the foil, and mash the potatoes and peas together.
  7. Add chicken broth, remaining butter, and seasonings to taste, and mix well.
