Ingredients

  • 6 eggs
  • 2 3/4 cups sugar
  • 3 cups flour
  • 1 (No. 2) can pumpkin
  • 1 cup shortening (1/2 cup Crisco and 1/2 cup butter)
  • 1 cup chopped pecans
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1 teaspoon ginger
  • 1 teaspoon cloves
  • 1 teaspoon cinnamon

Instructions

  1. Cream butter and sugar together.
  2. Add eggs one at a time, beating well after each addition.
  3. Sift flour three times to aerate.
  4. Add dry ingredients to the creamed mixture.
  5. Alternately add pumpkin and flour, then fold in chopped pecans.
  6. Bake in a preheated oven at 375°F (190°C) for 1 hour or until a toothpick inserted into the center comes out clean.
