Ingredients

  • 1 button garlic
  • 1 rib celery
  • 1/2 medium onion
  • 1 can flat anchovies
  • 3 whole eggs
  • 1 tsp. black pepper
  • 1 heaping tsp. Accent
  • 1/2 tsp. sugar
  • 2 Tbsp. mustard
  • 1 Tbsp. lemon juice
  • 2 c. salad oil

Instructions

  1. Peel garlic and cut in half.
  2. Scrape and slice celery.
  3. Peel onion and cut into chunks.
  4. Add garlic, celery, onion, anchovies, mustard, lemon juice, and everything except eggs and oil into a blender or food processor and process for 5 seconds.
  5. Add eggs and blend again for a few seconds.
  6. Add oil a tablespoon at a time until 1/2 cup has been added.
  7. Then add a quarter cup at a time, blending well between each addition and for a few seconds after all oil has been added.
  8. Serve over romaine lettuce with fresh croutons.
