Ingredients

  • 1 lb. pkg. smoked sausage
  • 8 medium potatoes
  • 3 c. shredded Cheddar cheese
  • 1 (16 oz.) bag baby carrots
  • 4 tsp. margarine or butter
  • season salt to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut 4 sheets of tinfoil into 12‑inch squares and lay them flat.
  3. Arrange sliced smoked sausage, diced potatoes, and baby carrots in the center of each foil square.
  4. Sprinkle shredded cheddar cheese over the vegetables.
  5. Add a small pat of butter or margarine to each square and season with salt.
  6. Fold the foil over the ingredients to create sealed packets, crimping the edges tightly.
  7. Place the packets on a baking sheet and bake for 20–25 minutes, until potatoes are tender.
  8. Open the packets carefully, stir the contents, and serve immediately.
