Meat Potato Pie

- Mix ground beef, 1/2 cup catsup, chopped onion, chopped bell pepper, seasonings, egg, milk, melted Velveeta cheese, and butter together. Use cracker, oatmeal, or bread crumbs to help bind the mixture.
- Form the mixture into a loaf or casserole in a baking dish.
- Bake in a preheated oven at 350°F for about 1 hour. Drain grease when done.
- While the meat is baking, prepare mashed potatoes using instant or fresh potatoes.
- Once the meat is cooked, spread the mashed potatoes over the top of the meat.
- Pour remaining 1/2 cup catsup and some milk over the mashed potatoes and cheese.
- Return to the oven and bake for an additional 30 minutes or until the cheese is melted and bubbly.
