Ingredients

  • 1 lb ground beef
  • 1/2 bell pepper
  • 1 cup catsup
  • milk
  • seasonings (salt, pepper, garlic powder, or your choice)
  • 1 small onion
  • 1 egg
  • Velveeta cheese, melted
  • butter

Instructions

  1. Mix ground beef, 1/2 cup catsup, chopped onion, chopped bell pepper, seasonings, egg, milk, melted Velveeta cheese, and butter together. Use cracker, oatmeal, or bread crumbs to help bind the mixture.
  2. Form the mixture into a loaf or casserole in a baking dish.
  3. Bake in a preheated oven at 350°F for about 1 hour. Drain grease when done.
  4. While the meat is baking, prepare mashed potatoes using instant or fresh potatoes.
  5. Once the meat is cooked, spread the mashed potatoes over the top of the meat.
  6. Pour remaining 1/2 cup catsup and some milk over the mashed potatoes and cheese.
  7. Return to the oven and bake for an additional 30 minutes or until the cheese is melted and bubbly.
