Ingredients

  • 1/4 cup salad oil
  • 2 shallots, minced
  • 1/4 cup fresh parsley or 2 teaspoons dry
  • 3 pounds beef roast, cut in 1-inch cubes
  • 1/4 cup Worcestershire sauce
  • 1 1/2 quarts water
  • 2 cans (15 oz.) red kidney beans, drained
  • 1 large onion, chopped
  • 1/4 cup celery
  • 1 teaspoon dry mustard
  • 2 tablespoons soy sauce
  • 2 teaspoons dried leaf oregano
  • 2 teaspoons Tabasco sauce
  • 1/2 cup cornmeal
  • 1 can (28 oz.) crushed tomatoes

Instructions

  1. Heat oil in a large saucepan.
  2. Add beef and brown on all sides.
  3. Add water, seasonings, Tabasco sauce, shallots, parsley, onion, Worcestershire sauce, and soy sauce.
  4. Stir to mix well.
  5. Bring to a boil.
  6. Cover and reduce heat.
  7. Simmer for 1 hour and 15 minutes, stirring occasionally.
  8. Add beans and crushed tomatoes; stir to mix well.
  9. Add cornmeal and mix well.
  10. Simmer, uncovered, for an additional 30 minutes until the meat is tender.
