Ingredients

  • 1 Tbsp. olive oil
  • 1 lb. cooked ground beef, chicken or veal
  • 2 eggs
  • 1 cup chopped cooked spinach, squeezed dry
  • 1/3 cup Parmesan cheese
  • 1/4 tsp. salt

Instructions

  1. Melt butter in a skillet.
  2. Add cooked ground meat to the skillet.
  3. Cook until browned and drain any excess grease.
  4. Return to heat and add cooked, squeezed-dry spinach.
  5. Saute for 2 minutes.
  6. Remove from heat and stir in eggs, Parmesan cheese, salt, and pepper.
  7. Use the mixture to fill dough as needed.
