Ingredients

  • 2 Tbsp. margarine or butter
  • 2 cloves garlic, crushed
  • 1 small onion, chopped
  • 6 boneless, skinless chicken breast halves
  • 1/2 c. red wine vinegar
  • 2 tsp. chopped fresh thyme or 1/2 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 large tomatoes, chopped
  • 1 can (2 1/4 oz.) sliced ripe olives, drained

Instructions

  1. Heat margarine in a 10-inch skillet over medium-high heat until melted.
  2. Cook garlic, onion, and chicken in margarine until the chicken is browned on both sides.
  3. Stir in the remaining ingredients; reduce heat.
  4. Cook for 10 to 15 minutes or until the juice of the chicken is no longer pink when the centers of the thickest pieces are cut.
