Ingredients

  • 2 chicken bouillon cubes
  • 1 lb orechiette pasta
  • 3 to 4 large yellow summer squash, chopped
  • 1.5 cups frozen peas, defrosted
  • 2 tablespoons olive oil
  • several mint leaves, chopped
  • additional mint leaves for garnish
  • fresh parsley or dried
  • fresh basil or dried
  • garlic powder
  • salt

Instructions

  1. Bring water to a boil and cook the orechiette pasta with the chicken bouillon cubes until al dente.
  2. While the pasta cooks, heat olive oil in a sauté pan over medium heat.
  3. Add chopped summer squash, defrosted peas, and chopped mint leaves to the pan.
  4. Cook the mixture on medium heat until the squash is tender, about 5-7 minutes.
  5. Sprinkle garlic powder, salt, and black pepper to taste during cooking.
  6. Drain the cooked pasta and add it to the sauté pan.
  7. Toss everything together and garnish with whole mint leaves, chopped parsley or basil, and chilled Jersey tomatoes before serving.
