Ingredients

  • 4 chicken breasts
  • Flour
  • 4 Tbsp butter
  • 1 Tbsp oil
  • 8 cherry tomatoes
  • 1 Tbsp crushed tarragon
  • 2 Tsp chopped parsley
  • 2 tsp lemon juice

Instructions

  1. Sprinkle chicken breasts with salt and pepper, then dredge with flour.
  2. Heat 4 tablespoons of butter and 1 tablespoon of oil in a large skillet.
  3. Saute the chicken breasts for 4 to 6 minutes on each side until golden and cooked through.
  4. Add the cherry tomatoes to the skillet and cook until heated through.
  5. Transfer the chicken breasts and tomatoes to a warm plate.
  6. Add 1 tablespoon of crushed tarragon, 2 teaspoons of chopped parsley, and 2 teaspoons of lemon juice to the skillet to deglaze.
  7. Pour the sauce over each chicken breast and serve.
