Instructions

  1. Preheat oven to 400°F.
  2. Cut each pita horizontally in half.
  3. Cut each half into quarters.
  4. Arrange pita pieces cut-side up on a cookie sheet.
  5. Bake until golden brown, about 5 to 6 minutes.
  6. Remove from oven, but keep oven on.
  7. Gently rub the tops of pita quarters with garlic cloves, taking care not to break the pitas.
  8. Arrange the pita quarters on an ovenproof plate.
  9. In a medium bowl, combine diced tomatoes, shredded mozzarella, chopped parsley, balsamic vinegar, chopped basil, salt, and crushed red pepper flakes.
  10. Spoon the tomato mixture onto the pita pieces.
  11. Bake until the cheese melts, about 5 minutes.
