Ingredients

  • 1 1/2 cups dry kidney beans

  • 2 tablespoons tomato paste
  • 2 tablespoons wine vinegar
  • 2 teaspoons chili powder
  • 1 teaspoon dry mustard
  • 2 tablespoons tamari
  • black pepper

Instructions

  1. Soak the dry kidney beans overnight in water.
  2. Drain the soaked beans, then add 5 cups of fresh water, a bay leaf, and Kombu to the pot.
  3. Bring to a boil and cook until beans are very tender, adding more water if needed.
  4. While the beans are cooking, sauté the diced onion, carrot, and apple in olive oil until tender.
  5. Once the beans are done, add the sautéed vegetables and all ingredients except cheese to the pot.
  6. Simmer the mixture for about 10 more minutes.
  7. Turn off the heat and stir in the cheese before serving.
