Ingredients

  • 2 egg whites
  • 1/8 tsp. salt
  • 1/8 tsp. cream of tartar
  • 1/2 cup sugar
  • 1/2 cup chopped pecans
  • 1/2 tsp. vanilla extract

Instructions

  1. Beat egg whites until foamy.
  2. Add salt and cream of tartar; beat until soft peaks form.
  3. Add 2 tablespoons of sugar at a time, beating constantly, until stiff peaks form.
  4. Fold in chopped pecans and vanilla extract.
  5. Spoon mixture into a lightly greased pie plate, shaping it as a pie shell.
  6. Bake at 300°F for 50 minutes or until light brown and firm.
  7. Cool before serving.
