Mexi-Beef Bites are cheesy, flavorful, bite-sized treats combining ground beef, melted cheeses, and spicy chilies, perfect for snacking or party appetizers.

Ingredients

  • 1 lb. ground beef
  • 1 c. shredded Cheddar cheese
  • 1 c. shredded Monterey Jack cheese
  • 1 can chopped green chilies (4 oz.)
  • 1/2 c. taco sauce
  • 1/2 c. chopped jalapeno pepper
  • 2 large eggs
  • tortilla chips

Instructions

  1. Cook ground beef until no pink remains, then drain excess fat.
  2. Stir in shredded Cheddar and Monterey Jack cheeses, chopped green chilies, taco sauce, chopped jalapeno pepper, and beaten eggs.
  3. Transfer the mixture to an 8 x 8-inch baking pan.
  4. Bake at 350°F (175°C) for 35 to 40 minutes or until a knife inserted comes out clean and the top is golden brown.
  5. Serve warm, spooned onto individual plates, and enjoy with tortilla chips.
