Ingredients

  • 1/2 onion, finely chopped
  • 1/2 tsp. ground cumin
  • 1/2 lb. uncooked boneless chicken, cubed
  • 1 (15 oz.) can pinto or chili beans (undrained)
  • 1 (14 1/2 oz.) can stewed tomatoes (undrained)
  • 1 (14 1/2 oz.) can chicken broth
  • 1 (14 1/2 oz.) can whole kernel corn

Instructions

  1. In a 4-quart pot, brown the onion, chicken, and cumin; add pepper to taste.
  2. Stir in the remaining ingredients; bring to a boil.
  3. Cook over medium heat for 10 minutes.
  4. Serve with shredded Cheddar cheese, if desired.
