Ingredients

  • 1 lb. ground beef
  • 4 slices bacon, cut in 1/2-inch slices
  • 1/2 c. chopped onion
  • 1/2 c. green pepper, chopped
  • 1 clove garlic, minced
  • 1 medium eggplant, cut into 1/2-inch cubes (6 to 8 c.)
  • 16 oz. can tomato sauce
  • 1/2 tsp. pepper
  • 1 c. shredded Mozzarella cheese

Instructions

  1. Microwave ground beef at Full power until beef loses pink color (5 to 15 minutes); drain and set aside.
