Ingredients

  • 1 tsp. oil
  • 1/2 c. diced bell pepper
  • 1/2 tsp. chili powder
  • 1/4 tsp. ground cumin
  • 4 oz. drained cooked beans
  • 1/2 c. salsa
  • 4 (4 oz.) baked potatoes
  • 3 oz. grated Cheddar cheese
  • 2 Tbsp. minced onions

Instructions

  1. In a small skillet, heat oil; add pepper and cook, stirring often for 5 minutes.
  2. Reduce heat to low, add cumin and chili powder and cook 2 minutes, stirring constantly.
  3. Add beans and salsa, cover and simmer 5 minutes.
  4. Serve over hot, baked potatoes.
  5. Top with cheese and onion.
