A flavorful and cheesy Mexican bean bake featuring refried beans, salsa, and melted cheese, topped with fresh lettuce and tomato, perfect for a quick and satisfying meal.

Ingredients

  • 1 c. baking mix
  • 1/4 c. salsa
  • 16 oz. can refried beans
  • 1 (4 oz.) can chopped green chilies, undrained
  • 3/4 c. salsa
  • 3/4 c. shredded cheese
  • 1 c. shredded lettuce
  • 1 small tomato, chopped

Instructions

  1. Spray an 8 x 8-inch baking dish with cooking spray.
  2. Mix the baking mix, salsa, refried beans, and chopped green chilies in a bowl.
  3. Pour the mixture into the prepared baking dish.
  4. Top with salsa and shredded cheese.
  5. Bake uncovered at 375°F for 30 minutes or until set.
  6. Remove from oven and top with shredded lettuce and chopped tomato.
  7. Serve topped with yogurt if desired.
