Ingredients

  • 1 lb. ground beef
  • 1 large onion
  • 1/4 tsp. salt
  • 1 (1 lb.) can chili
  • 1 (10 oz.) can tomato soup
  • 1 medium size pkg. Fritos
  • 1 cup grated cheese
  • dash of catsup

Instructions

  1. Put ground beef in a skillet and brown. Let simmer until done. Add chopped onion and salt. Mix chili with tomato soup and simmer, stirring occasionally. If mixture is too dry, add a small amount of water.
  2. Line a large casserole dish with half of the Fritos, then pour the beef mixture over the Fritos. Top with the remaining Fritos.
  3. Sprinkle grated cheese and dash of catsup on top. Bake in a 400°F oven until the cheese is melted. Serve hot.

Tips & Substitutions

For added flavor, consider substituting ground beef with ground turkey or chicken. If you want a vegetarian option, use black beans or lentils instead. You can also enhance the dish with spices like cumin or chili powder. Serve with a side of sour cream or guacamole for an extra layer of richness. This casserole complements well with Mexican recipes like Chili Con Queso.

Serving Suggestions

Serve the Mexican casserole hot, garnished with fresh cilantro or green onions for a burst of color. It pairs perfectly with a side salad or Mexican-style rice. For a complete meal, consider serving it alongside chips and Salsa or a refreshing drink like horchata or agua fresca. This dish is also great for potlucks or family gatherings.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place the casserole in a preheated oven at 350°F until warmed through, about 20-25 minutes. You can also microwave individual portions, but be sure to cover them to retain moisture.
