Ingredients

  • 1 lb. Chicken Breast
  • 1 Onion
  • 1 Pepper
  • 1 can Whole Kernel Corn
  • 1 can Chicken Broth
  • 1 c. mild Salsa
  • 1 1/2 c. Rice
  • 1 c. Cheddar Cheese

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add chicken, onion, and pepper; cook and stir until the chicken is cooked through.
  3. Add corn, chicken broth, and salsa; bring to a boil.
