Mexican Egg Salad
Ingredients
- 12 hard-boiled eggs, peeled and chopped ⓘ
- 5 green onions, sliced ⓘ
- 1 red pepper, diced ⓘ
- 1 1/2 cups cheddar cheese, grated ⓘ
- 1 clove garlic, minced ⓘ
- 1 lime, juice of ⓘ
- 1 teaspoon cumin ⓘ
- 4 celery ribs, peeled and chopped ⓘ
- 2 jalapeno peppers, minced ⓘ
- 1 cup mayonnaise ⓘ
- 1 tablespoon chili powder ⓘ
- salt and pepper ⓘ
- 1 sliced avocado (optional) ⓘ
- cilantro, chopped (optional) ⓘ
Instructions
- Place eggs, celery, green onions, jalapenos, red pepper, garlic, and cheese in bowl; Toss to combine.
- Mix mayonnaise, lime juice and spices in small separate bowl.
- Fold in egg mixure.
- Chill.
- Transfer to serving dish.
- Garnish with sliced avocado and cilantro.
