Ingredients

  • 1 lb. dried red beans
  • 4 c. cold water
  • 1 large onion
  • 1 can tomatoes
  • 2 garlic cloves
  • 1 tsp. crushed red pepper or 2 tsp. chili powder
  • 2 tsp. salt
  • 1/4 lb. salt pork or bacon

Instructions

  1. Put soaked and drained beans into the crock-pot.
  2. Add water, chopped onion, canned tomatoes, minced garlic, crushed red pepper or chili powder, salt, and chopped salt pork or bacon.
  3. Cover and cook on High for 2 hours.
  4. Reduce heat to Low and cook for an additional 8 hours.
