Mexican Rice Cornbread

A flavorful Mexican-inspired cornbread loaded with corn, jalapenos, rice, and cheese, perfect for family dinners, potlucks, or as a savory side dish.

Ingredients

  • 1 1/2 cups cornbread mix
  • 1 can cream-style corn
  • 2 jalapeno peppers, finely chopped
  • 1 cup milk
  • 2 tablespoons onion, finely chopped
  • 1 cup cooked rice
  • 1 cup grated Cheddar cheese
  • 2 eggs

Instructions

  1. Mix all ingredients well.
  2. Pour oil in the bottom of a 13 x 9-inch pan and sprinkle with 2 teaspoons of cornmeal.
  3. Preheat the oven to 375°F until hot; remove the pan and pour in the batter.
  4. Return the pan to the oven and bake for 45 minutes.
