A hearty Mexican-inspired casserole layered with seasoned ground beef, beans, cheese, and tortillas, perfect for family dinners and satisfying comfort food with bold flavors.

Ingredients

  • 1 pkg. small flour tortillas
  • 1 1/2 to 2 lb. hamburger meat
  • 1/2 pkg. onion soup mix
  • 2 (16 oz.) cans pinto beans
  • 1 large pkg. shredded cheese
  • 1 large jar picante sauce
  • salt

Instructions

  1. Brown the hamburger meat; add salt and pepper to taste.
  2. Add onion soup mix to the meat; drain excess liquid.
  3. Put the mashed pinto beans in a skillet and heat them; mash until sticky.
  4. Spray a 13 x 9 x 2-inch pan with cooking spray.
  5. Lay tortillas on the bottom of the pan until the surface is covered.
  6. Pour the mashed beans over the tortillas.
  7. Spread the cooked meat over the beans.
  8. Cover with one layer of shredded cheese and picante sauce, then add a second layer of tortillas.
  9. Top with remaining cheese and picante sauce.
  10. Bake at 350°F until very hot and cheese has melted.
