Ingredients

  • 3/4 cup butter or margarine, softened
  • 1/2 cup smooth peanut butter
  • 1 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/3 cup peanuts
  • Red shoestring licorice
  • Black coarse decorating sugar

Instructions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. In a large bowl, cream butter, peanut butter, and brown sugar until fluffy.
  3. Add egg and vanilla; beat until smooth.
  4. Add flour to creamed mixture; stir until a soft dough forms.
  5. Shape dough into 1-inch balls.
  6. Pinch each ball to form a nose.
  7. Decorate each cookie using peanut halves for ears, small pieces of licorice for eyes, and sugar crystals for noses.
  8. Use a toothpick to poke a hole in the back of each cookie for the tail.
  9. Transfer cookies to an ungreased baking sheet.
  10. Bake for 10 to 12 minutes or until bottoms are lightly browned.
  11. Transfer cookies to a wire rack.
  12. While cookies are warm, insert 2-inch long pieces of licorice into holes for tails.
  13. Cool completely and store in an airtight container.
