- Heat vegetable oil in a pie plate until very hot, about 5 to 7 minutes. Dip each tortilla in the hot oil to make it more pliable.
- Combine the shredded Cheddar and Monterey Jack cheese, chopped green onions, and chopped black olives in a bowl.
- Place about 2 tablespoons of the cheese mixture into each tortilla, roll them up, and place seam-side down in an 8 x 12-inch shallow baking dish.
- Pour enchilada sauce over the rolled tortillas and sprinkle with grated Cheddar cheese and chopped green onions on top.
- Microwave at 80% power (medium-high) for 13 to 15 minutes, turning the dish once during cooking.
