Ingredients

  • 10 to 12 corn tortillas
  • 1/3 cup vegetable oil
  • 3 cups shredded Cheddar and Monterey Jack cheese, mixed
  • 1/2 cup green onion, chopped
  • 1 (6 oz.) can black olives, chopped
  • 1 (10 oz.) can mild enchilada sauce
  • 2 cups grated Cheddar cheese

Instructions

  1. Heat vegetable oil in a pie plate until very hot, about 5 to 7 minutes. Dip each tortilla in the hot oil to make it more pliable.
  2. Combine the shredded Cheddar and Monterey Jack cheese, chopped green onions, and chopped black olives in a bowl.
  3. Place about 2 tablespoons of the cheese mixture into each tortilla, roll them up, and place seam-side down in an 8 x 12-inch shallow baking dish.
  4. Pour enchilada sauce over the rolled tortillas and sprinkle with grated Cheddar cheese and chopped green onions on top.
  5. Microwave at 80% power (medium-high) for 13 to 15 minutes, turning the dish once during cooking.
